Approximately four years ago I give up sugar What’s the difference between raw cacao and cocoa. What began as a New Year resolution became something more? Quitting sugar was easier than I was expected, and I definitely felt better than ever, and I just kept going and going.
The hardest things were finding healthy alternatives to satisfy my sweet cravings. I started using cacao but found out that some people were confused that there are differences between raw cacao and cocoa.
Is there any difference between raw cacao and cocoa?
The researchers that brag of chocolate’s astonishing health benefits are definitely not referring to your store-bought chocolate. The chocolate that they are thinking is raw cacao.
Raw cacao is made from roasted cocoa beans that are cold processed. This process maintaining the living enzymes and at the same time removing the fat (cacao butter).
Cocoa seems to be the same, but it is definitely not. Cocoa powder is also raw cacao, but this one have been roasted at a very high temperature. Sadly, these procedures change the structure of the cacao beans, thus reducing the content of the enzymes and lowering the nutritional value.
What are the health benefits of raw cacao?

• It is Protecting your nervous system because it is high in resveratrol, a powerful antioxidant as well found in red wine, recognized for its capability to cross the blood brain barrier to help out with protecting your nervous system

If the cacao has more benefits than cocoa since it’s raw, what will happen when we cook it?
This is a very good question. Sorry to say there is no research on whether or not if you eat raw cacao will destroy the antioxidant level making it more similar to its more processed and heated cousin cocoa. BUT we think that if you are consuming the product in its raw form, it has more health benefits than consuming previously heated and processed correspondent
